60 grams sun-dried Tomatoes (in oil)
2 Tbsps olive oil
2 Tbsps Tomato paste
800 grams blanched Tomatoes (canned)

40 grams grated Parmesan

Preparation steps

Peel onion and garlic and finely dice. Coarsely chop sun-dried tomatoes. Heat olive oil in a pan and saute onion, garlic and sun-dried tomatoes until translucent. Add tomato paste, saute briefly and season with salt and pepper. Chop blanched tomato, add to the pan, and mix well. Simmer for about 20 minutes. Add herbs and red pepper flakes and simmer for another 5-10 minutes until desired consistency is reached.

Cook pasta in a pot of boiling salted water until al dente. Season the sauce with salt, pepper and a pinch of sugar. Distribute drained pasta on plates and cover with sauce. Serve garnished with Parmesan and basil.
