Ingredients

For the dough
1 ¾ cups gluten-free bread flour (plus extra for sprinkling)
1 large egg (beaten)
1 Tbsp olive oil
1 pinch salt
water (if needed)
For the filling
3 ½ ozs Chard leaf
1 Tbsp olive oil
4 ozs button Mushrooms
1 shallot (finely chopped)
1 clove garlic cloves (finely chopped)
½ cup Sour cream
2 Tbsps grated Parmesan
1 egg yolk
salt

Preparation steps

For the dough: put the flour into a mixing bowl. Add the egg, oil and salt and knead to a dough. Add water if the mixture is too stiff. Cover and leave to rest for about 40 minutes.

For the filling: put the rinsed chard into a pan and heat until wilted. Cool briefly, squeeze out excess moisture and chop.

Heat the oil in a frying pan and gently cook the shallot and garlic until translucent. Add the mushrooms and cook until the liquid has almost all evaporated. Stir in the chard, cover and set aside.

Mix together the sour cream, parmesan, egg yolk, and the mushroom and chard mixture. Season to taste with salt and pepper.

Roll out the dough thinly on a floured work surface.

Spread with the filling, leaving a border around the edges and roll up like a Swiss roll.

Wrap the roll in greased foil and seal the ends. Place in the top of a steamer and steam for 40-60 minutes until the dough is cooked. Remove from the steamer and cool in the foil for 10 minutes.
