- 2 Oranges (peeled, flesh sliced)
- 1 Lime (juiced)
- ¼ cup Cashews (chopped)
- cinnamon
- 3 eggs
- ¾ cup all-purpose flour
- 1 Tbsp Oat bran
- Baking powder
- 4 Tbsps milk
- 4 Tbsps sunflower oil
- Maple syrup (to serve)

Preparation steps
1.
Mix together the lime juice, orange flesh, nuts an a pinch of cinnamon. Set aside and leave to steep.
2.
Separate the eggs and beat the whites with a pinch of salt until stiff.
3.
Mix together the flour and oat bran with a pinch of baking powder. Add the egg yolks and the milk and mix well. Fold in the egg whites.
4.
Heat some oil in a hot pan and fry portions of the pancake butter. Fry until light brown on both sides, then remove from the pan to a plate.
5.
Serve immediately drizzled with maple syrup and accompanied by the orange salad.
