- 2 eggs
- 1 pinch salt
- 1 cup all-purpose flour
- 1 ⅛ cups Coconut milk
- 1 Tbsp sugar
- 2 medium-sized Banana
- butter
- clear honey
- To decorate
- Banana
- Orange zest
- mint
Preparation steps
1.
Whisk the eggs with the salt, flour, coconut milk and sugar to make a pancake batter.

Peel and mash the bananas and whisk into the batter.

Melt a little butter in a frying pan until very hot. Add a ladleful of batter, tipping it around from side to side to coat the base with batter. Cook for 1-2 minutes until the underside is set and golden, then turn over and cook for a few seconds more. Repeat the process until all the batter is used, adding a little butter to the pan each time.
4.
Keep the cooked pancakes warm in the oven at 140°C (120° fan) 275°F gas 1 while you make the rest.
5.
To serve, pour honey over the pancakes and decorate with banana slices, orange zest and mint leaf.
