- ½ cup honey
- 2 Tbsps sugar
- 1 tsp Dijon mustard
- 1 Tbsp soy sauce
- 1 tsp Italian seasoning (to taste)
- ½ tsp garlic powder
- ⅓ cup olive oil
- kosher salt (to taste)
- freshly ground Black pepper (to taste)
- 1 can hearts of palm (sliced thin)
- 2 Avocados (diced)
- 1 Tbsp fresh parsley (finely chopped)
- 4 cups mixed greens

Preparation steps

In a 1-quart saucepan, heat pomegranate juice, honey and sugar over medium-high heat. Simmer about 5 minutes, stirring until sugar dissolves and sauce thickens. Remove from heat and pour sauce into a mixing bowl.

Add mustard, soy sauce, Italian seasoning, and garlic powder to the sauce; whisk together until well combined. While continuing to whisk, slowly add olive oil in a steady stream. Continue to whisk until incorporated. Season with salt and pepper. Set aside.
3.
In a large mixing bowl, combine hearts of palm, avocado and parsley. Pour in dressing and toss gently. Portion salad onto a dish and serve with mixed greens.
