Preparation steps

1.

Peel and finely chop onion. In a small pan, cook onion in hot oil until translucent. Deglaze with wine and simmer until reduced to about 150 ml (approximately 2/3 cup). Season with vinegar, salt, sugar, and pepper to taste. Let cool.

2.

Open oysters with an oyster knife. If desired, place oysters on oyster plates and drizzle with a little of the red wine sauce. Serve remaining sauce on the side with a baguette.
