- 6 ripe Tomatoes
- 2 red chili peppers
- 1 shallot
- 1 garlic clove
- 3 Tbsps olive oil
- 1 Tbsp White vinegar
- salt
- Tabasco sauce (as desired)
- 1 pinch sugar
- 4 Chives (for garnish)
- 12 fresh Oyster

Preparation steps

For the salsa: Blanch the tomatoes in boiling water, peel, quarter, core and cut into small cubes. Rinse the chile peppers, cut in half lengthwise, remove seeds and finely chop. Peel and finely chop the shallot and garlic. Heat the oil in a skillet. Add the chiles, shallot and garlic, and cook until translucent.

Stir in the tomatoes and vinegar. Season with salt and hot sauce to taste. Stir in the sugar. Remove from heat and allow to cool.
For garnish: Rinse the chives, shake dry and cut into 2 cm (approximately 1 inch) pieces.
For the oysters: Rinse and scrub the oysters. Open carefully, loosen the oyster meat, and place on ice.
For serving: Top with the salsa and garnish with chives.
