350 grams Porcini mushroom
2 shallots
24 Grape
4 BLS U1601 (each about 160 grams)
salt
freshly ground peppers
2 Tbsps sunflower oil
25 grams butter
4 centiliters Calvados
150 milliliters Whipped cream
1 Tbsp chopped parsley
parsley (for garnish)
coarse Sea salt

Preparation steps

1.

Preheat oven to 200°C (approximately 400°F). Rinse mushrooms and cut into small pieces. Peel shallots and finely dice. Rinse grapes, cut in half, remove seeds and peel skin.

Rinse steaks and pat dry. Season with salt and pepper. Sear on all sides in a pan with hot oil. Then cook in oven for 15 minutes.

Saute shallots and mushrooms in butter for about 5 minutes. Season with salt and pepper.

4.

Deglaze with Calvados and heavy cream. Simmer for 5 minutes and then add grapes and chopped parsley. Cook for 1-2 minutes and season with salt and pepper. Place grapes, mushrooms and sauce on plates and top with steaks. Garnish with parsley and sprinkle with sea salt.
