- 8 large carrots (peeled)
- 2 inches fresh ginger (peeled)
- 2 cups Orange juice
- 4 Tbsps plain Yogurt
- Chives (to garnish)

Preparation steps
1.
Using a potato peeler, peel thin strips from half of one of the carrots, cut them into thin batons and set aside for the garnish.
2.
Pass the remaining carrots and the ginger through a vegetable juicer. Mix the juice with the orange juice and yoghurt and stir well.
3.
Pour into glasses and garnish with the carrot strips and the chives.
