- ⅓ cup light brown sugar (packed)
- ½ cup honey
- ¾ cup Pineapple juice
- ½ tsp ground ginger
- 1 clove garlic cloves (finely minced)
- 2 tsps parsley
- 1 fully cooked, boneless ham (about 5-6 pounds)
- 16 ozs carrots (peeled)
- 16 ozs Asparagus (washed and trimmed)

Preparation steps

In a large plastic food storage bag or bowl, combine brown sugar, honey, pineapple juice, ginger, garlic, and parsley. Place ham in the marinade, coating well, and let marinate in the refrigerator for at least six hours, or overnight. Turn frequently.

Preheat the oven to 350 degrees F. Place ham in a roasting pan. Brush with marinade, reserving the remaining marinade for basting. Bake, basting frequently for 1 hour to heat through or until an instant read meat thermometer reads about 140 degrees F. Over cooking will cause the ham to be dry.

While the ham is baking, prepare the vegetables. Blanch in boiling, salted water until al dente. About 10 minutes before the end of cooking time place the vegetables in the roasting pan with the ham. Glaze the vegetables with the marinade.
4.
Transfer ham to a serving platter and arrange carrots and asparagus around the ham. Slice ham and serve.
