9 sheets white gelatin
8 Oranges

75 grams sugar
125 milliliters Whipped cream
650 grams Quark
4 centiliters Orange liqueur

Preparation steps

Soak gelatin in cold water. Zest 2 oranges, peel remaining and cut all into slices. Juice and reserve.

Beat egg whites until stiff. Sprinkle with sugar and beat until glossy. Beat heavy cream until stiff. Mix quark with orange juice, zest and liqueur until smooth. Squeeze gelatin and dissolve in a small saucepan over low heat with a small amount of quark mixture. Pour all back into quark mixture to combine. Fold in egg whites and heavy cream. Mix in half of the orange slices. Chill until firm.

Line the edge of pan with ladyfingers. Pour in cream, smooth and refrigerate for at least 3 hours. Garnish with remaining orange slices and meringue swabs. Rinse strawberries, cut into fine strips and spread over orange slices. Sprinkle with pistachios, cut and serve.
