For the dough
250 grams Pastry flour
80 grams sugar
1 pinch salt
1 egg
150 grams butter
For the topping
3 fresh Oranges
3 eggs
500 grams Marzipan
1 small bottle Almond extract
2 tablespoons Orange juice
50 grams powdered sugar
75 grams ground almonds

Preparation steps

For the dough: combine flour with sugar and salt, place on a work surface and make a well in the center. Add egg to the well. Cut butter into pieces and arrange around the well. Chop all ingredients with a knife until crumbly, knead with your hands until smooth dough forms. Shape into a ball and wrap in plastic wrap. Refrigerate for 30 minutes. For the topping: grate orange zest and chop into small pieces.

Separate eggs. Combine marzipan with almond flavor, juice, egg yolks and 1 whole egg and mix well. Beat remaining egg whites with a pinch of salt until stiff and gradually sprinkle sugar in. Fold egg whites into marzipan mixture, add orange zest.

Roll out dough on a floured work surface slightly larger than tart pan. Line pan with dough, making an edge all around.

 Prick dough with a fork several times and spread marzipan mixture on it. Cut out orange segments, cut into slices and arrange on top of marzipan. Heat marmalade slightly and pour 2/3 over the tart. Bake in preheated oven at 180°C (approximately 350°F) for 25-30 minutes. Remove cake from oven, drizzle with remaining marmalade and let cool. Loosen from the pan, transfer to cake plate and dust with powdered sugar. Cut into pieces and serve.
