Preparation steps

1.

For the oranges: Peel oranges, being sure to remove the pith, and cut into 1 cm (approximately 1/2 inch) thick slices.

2.

In a small saucepan, boil the sugar with 4 tablespoons of sugar until dissolved. Add the orange slices and remove from heat.

3.

For the cake batter: In a bowl, mix the eggs with the oil, cottage cheese and buttermilk until smooth. In a separate bowl, stir the flour with the almonds and baking powder. Stir the flour mixture into the egg mixture until thoroughly combined. Stir the honey, lemon juice and chocolate into the batter. Grease the springform pan. Pour the batter into the pan, smooth top, and arrange the orange slices (without syrup) over top. Bake in a 180°C (approximately 350°F) oven for 40-45 minutes. If the cake is getting too dark during baking, cover with aluminum foil. Once baked, remove from the oven and drizzle with the orange syrup. Allow to cool completely before loosening out of the springform pan. Serve garnished with mint.
