- ½ tsp grated Nutmeg
- 1 tsp vanilla extract
- 3 cups raisins
- 1 ½ cups Golden raisins
- ⅔ cup Candied fruit (chopped)
- ⅔ cup glace Candied cherry (roughly chopped)
- ½ cup almonds (roughly chopped)
- 1 ⅔ cups self-rising flour
- 1 ½ cups light brown sugar
- 1 ⅛ cups sunflower margarine
- 5 eggs
- 1 pinch salt
- powdered sugar

1 Cutting board, 1 Large knife, 8 Wooden skewers, 1 Small knife, 1 Plastic wrap, 1 Measuring cups, 1 Pot, 1 Small bowl, 1 Wooden spoon
Preparation steps
1.
Put the beer, spices and fruits into a large pan and bring to a simmer. Simmer gently over a very low heat for 15 minutes. Remove from the heat and leave for at least 4 hours or overnight.

Heat the oven to 140C,275F, gas 1. Grease and line a 20 cm|8 inch square tin with a double thickness of greaseproof paper.

Put the flour, sugar and margarine into a mixing bowl and add the eggs. Whisk or beat until smooth and blended.

Gradually stir in the fruit mixture until everything is combined. Spoon into the tin and level the top.
5.
Bake for 3-3 1/2 hours until cooked through. Cover the top with a double thickness of greaseproof paper if it is becoming too brown.
6.
Cool in the tin for 40 minutes, then cool on a wire rack.
7.
Sift icing sugar over the top of the cake just before serving.
