8 slices day-old, white gluten-free bread
¾ cup raisins
2 cups milk
2 tsps vanilla extract
4 large eggs
½ cup caster sugar
½ cup cream (48% fat)
2 cups Custard (to serve)

Preparation steps

1.
Heat the oven to 150°C (130° fan)300°F gas 2.

Spread the butter on one side of each slice of bread and slice diagonally in half.
3.
Scatter some of the raisins in the baking dish and cover with a layer of the bread, butter side down.
4.
Sprinkle with the remaining raisins, and then cover with the rest of the bread, buttered side up.
5.
Whisk together the milk, vanilla, eggs, 85g| 1/3 cup sugar, and cream. Strain into a jug and pour half over the bread. Leave to stand for 20 minutes.
6.
Pour the remaining milk mixture over the bread and sprinkle the top with the remaining caster sugar.
7.
Bake for 70-80 minutes until golden on top. Leave to stand for 5 minutes before serving with custard.
