- ⅓ cup unsalted butter (melted)
- ⅓ cup granulated sugar
- ½ tsp vanilla extract
- ½ cup plain flour
- 2 Tbsps cocoa powder
- 4 tsps ground Pistachio

Preparation steps
1.
Preheat the oven to 180°C | 350F | gas 4. Line a large baking tray with greaseproof paper

Turn over 12 cups on a work surface, near to where you will be taking the biscuits out of the oven.
3.
Whisk together the egg whites, sugar and pistachio nuts, until just combined. Add the melted butter and vanilla, and continue whisking.
4.
Add the flour then cocoa to the mixture, whilst still whisking, until the batter is smooth.
5.
Using a tablespoon drop the mixture onto your greaseproof paper and using the back of the spoon gently spread it into a thin layer, the mixture needs to be thin as the biscuits will not expand in the oven.
6.
Place in the pre-heated oven and cook for 12-14 minutes.
7.
Using a spatula, quickly remove the biscuits from the sheet and drape each one over a ramekin to form the shape, before placing on the upturned cups to maintain the shape.
8.
If the biscuits start to go hard before you have finished shaping them, put them back in the oven to make them soft again.
9.
Allow to cool completely before serving.
