2 cups Almond flour
1 cup chopped almonds
2 large carrots (finely grated)
1 tsp salt
½ tsp baking soda
2 eggs (lightly beaten)
1 tsp honey
1 tsp lemon juice

Preparation steps

Heat the oven to 180ºC (160º fan) 350ºF, gas 4.

Mix the almond flour, chopped almonds, carrots, salt and bicarbonate of soda in a large bowl.
3.
Mix together the eggs, honey and lemon juice then add to the dry ingredients. Work the mixture into a stiff dough, adding a little cold water if necessary, and form it into a loaf shape.
4.
Place the loaf in a greased tin or baking sheet and bake in the oven for 30 - 40 minutes. Let the loaf cool before you slice it.
