- 11 ozs Egg noodle
- 3 Tbsps sesame oil
- 1 Tbsp Fish sauce
- 1 tsp sugar
- Lime juice (from 1 lime)
- 1 red pepper (deseeded and cut into fine strips)
- 1 carrot (peeled and cut into fine strips)
- ½ Cucumber (deseeded and cut into fine strips)
- 1 scallion (cut into fine strips)
- 1 tin baby Sweet corn (roughly chopped)
- 1 ⅓ cups Feta (crumbled)
- 1 ⅓ cups almonds (roughly chopped)
- Chili flakes (to garnish)

1 Tablespoon, 1 Bowl, 1 Measuring cups, 1 Hand mixer, 1 Plastic wrap, 1 Cutting board, 1 Small knife, 1 Salad spinner, 1 Rolling pin, 1 Non-stick pan, 1 Slotted spatula, 1 Aluminum foil, 1 Large knife
Preparation steps
1.
Cook the noodles according to the packet instructions. Drain, refresh in cold water and set aside.
2.
Mix together the sesame oil, fish sauce, sugar and lime juice. Season to taste with salt and pepper and set aside.
3.
Mix together the pepper, carrot, cucumber, sweetcorn and spring onion. Stir in the dressing, top with the chopped almonds and garnish with the chilli flakes.
