- 1 cup chopped, roasted Hazelnuts
- 1 ½ cups unrefined powdered sugar
- ¼ cup raw cacao nib (plus 1 tbsp)
- 1 tsp ground cinnamon
- 1 pinch Sea salt
- 2 egg whites
- ½ tsp hazelnut extract
- ½ tsp vanilla extract

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
2.
Mix together the hazelnuts, sugar, cacao powder, cinnamon and salt in a mixing bowl.
3.
Whisk in the egg whites, hazelnut and vanilla extract until combined.
4.
Place tablespoonfuls of the mixture, apart on the baking tray.
5.
Bake for 15-17 minutes, until the tops of the cookies are cracked. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
