- ⅓ cup butter
- ⅓ cup caster sugar
- 6 Tbsps light brown sugar
- 1 large egg (beaten)
- ½ tsp vanilla extract
- 1 ¼ cups self-rising flour
- ¼ cup cocoa powder
- 1 pinch salt
- 3 ½ ozs Dark chocolate (60% cocoa solids, finely chopped)

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 3 large baking trays with non-stick baking paper.
2.
Beat together the butter and both sugar in a mixing bowl until fluffy. Beat in the egg and vanilla.
3.
Sift in the flour, cocoa and salt and stir in gently until combined. Stif in the chocolate.
4.
Place tablespoons of the mixture, well apart on the baking trays. Press down and spread out lightly with the back of a wet spoon.
5.
Bake for about 12 minutes until just firm. Cool on the baking trays for 1 minute, then place on a wire rack to cool completely.
6.
Sift a little icing sugar over the tops.
