200 grams Udon Noodle
2 Zucchini
5 large, ripe Tomatoes
1 yellow Bell pepper
1 onion
2 garlic cloves
2 Tbsps olive oil
salt

Preparation steps

Rinse and halve the zucchini and cut into pieces. Rinse the pepper, cut in half, remove the seeds and dice. Peel and dice the onion. Rinse the tomatoes, blanch in boiling water, remove the skin, cut in half, remove the seeds and cut into wedges. Peel the garlic and chop finely.

Heat the oil. Cook the onion and garlic until soft. Add the zucchini, tomatoes and peppers, cover and continue to cook over medium heat for 15 minutes. Season with salt and pepper. Prepare the udon noodles according to package instructions and mix with the vegetable ragout. Distribute in serving bowls and serve hot.
