- 14 ozs lean, stewing Beef
- 1 onion
- 1 carrot
- 1 Leek
- 1 pc Celery root
- ½ bunch parsley
- salt
- freshly ground peppers
- 1 pc freshly grated ginger (5 cm/2 inches)
- 2 Tbsps sesame oil
- For the noodle soup
- 11 ozs Chinese Egg noodle
- 9 ozs green Asparagus
- 1 pc fresh ginger (3 cm/1 inch)
- Wasabi
- 2 slices smoked Salmon (cut into strips)

Preparation steps

Wash the soup vegetables and prepare as appropriate, then chop roughly. Slice the ginger. Put the meat into a large pan with the soup vegetables and add sufficient water just to cover. Add the parsley, ginger, salt and pepper, cover and bring to a boil. Reduce the heat and simmer over a low heat for about 60 minutes.

Strain through a fine sieve and catch the broth in a second pan. Cut the meat into strips.

Wash the asparagus and cut off the woody ends. Blanch in plenty of salted water for about 8 minutes, then drain. Cut the ginger into wafer thin slices. Cook the noodles according to the package instructions and drain. Reheat the broth and season with salt and pepper. Stir in the sesame oil. Then add the asparagus, meat and sliced ginger. Leave to infuse for a while (do not let it boil again!), then ladle into small bowls and serve with wasabi and strips of salmon.
