Noodle Salad with Beef

- 350 grams Glass noodles
- 50 grams unsalted Peanuts
- 1 tsp light Sesame seeds
- 2 scallions
- 2 garlic cloves
- 1 pc ginger (approximately 3 cm)
- 500 grams Beef fillet
- 1 Tbsp sesame oil
- salt
- freshly ground peppers
- 2 Tbsps Rice vinegar
- 1 Tbsp light soy sauce
- 3 Tbsps Peanut oil
- sugar
- cayenne pepper
- Lime juice
- 1 handful cilantro
- ½ Dragon fruit (dragon fruit)
Preparation steps
Cook noodles according to package directions, drain and cut slightly smaller with scissors if desired. Toast nuts and sesame seeds in a small dry skillet until an aroma is created. Let cool and then chop coarsely.
Rinse scallions, trim and cut into thin rings. Peel garlic and ginger and finely chop. Rinse meat, pat dry and cut into strips. Heat oil in a wok, sauté beef for 1-2 minutes and season with salt and pepper. Remove beef from the wok and set aside.
Sauté garlic and ginger pieces in the wok until soft. Add scallions. Season with vinegar, soy sauce, peanut oil, sugar, cayenne pepper and lime juice to taste and allow to cool. Rinse cilantro, shake dry and pluck leaves from stalk.
Rinse pitaya, pat dry, cut in half and cut into slices. To serve, mix noodles and beef with the sauce and serve on plates with pitaya and cilantro leaves. Garnish with toasted nuts.
