4 kilograms mussels
3 onions
250 grams carrots
1 handful Basil
1 handful parsley
1 Tbsp butter
250 milliliters dry white wine
salt
freshly ground peppers

Preparation steps

1.

Sort through mussels and discard any that have opened. Rinse mussels under cold running water and debeard.

2.

Peel and finely chop onions. Peel and cut carrots into small cubes.

3.

In a large pot, sauté onions. Add carrots and sauté. Add 250 ml (approximately 1 cup) water and wine. Season with salt and pepper and bring to a boil. Add  mussels. Cover and cook over high heat, occasionally shaking the pan vigorously, about 8 minutes.

4.

Remove and discard any mussels that have not opened. To serve, drain mussels and serve sprinkled with parsley, basil and mussel cooking liquid.

5.

Serve with fresh white bread.
