300 grams Long grain rice
50 grams dried Wood Ear Mushrooms (cloud ear mushrooms)
soy sauce
freshly ground peppers
2 Tbsps Peanut oil
2 scallions

Preparation steps

1.

Soak the mushrooms in warm water. Boil the rice in twice the amount of lightly salted water and cover. Simmer over low heat for about 25 minutes. Remove and let the rice cool. Cut the scallions into rings.

Heat the peanut oil in a wok. Stir in the cold rice for about 3 minutes. Season with soy sauce and pepper. Add the scallions and drained mushrooms. Saute for another 2 minutes, stirring constantly. Serve immediately.
