- 100 grams Parsnips
- 1 tsp Truffle oil
- 100 grams Porcini mushroom (cleaned)
- 1 Tbsp butter
- 1 shallot (chopped)
- 1 Tbsp Pastry flour
- 2 Tbsps white wine
- 500 milliliters Chicken broth
- 200 grams Whipped cream
- 1 tsp Truffle oil
- salt
- freshly ground peppers
- Red Basil

Preparation steps

Peel parsnips, cut into thin sticks and mix with truffle oil. Place in an ovenproof dish and bake in hot oven (180°C, approximately 350°F) for 15-20 minutes, occasionally stirring.

Cut mushrooms into small pieces. Sweat shallots in hot butter until translucent, add mushrooms and cook 1-2 minutes, sprinkle with flour and pour in broth. Simmer 5 minutes, then puree, stir in cream and season with salt and pepper. Pour into glasses, garnish with basil and serve with the parsnip sticks.
