400 grams Puff pastry dough
500 grams mixed Mushrooms (such as porcini and button mushrooms)
1 onion
2 garlic cloves
3 Tbsps butter
1 Tbsp freshly chopped thyme
2 Tbsps freshly chopped parsley

Preparation steps

1.

Thaw puff pastry, if necessary, and roll out into 2 equal rectangles until about 3-4 mm thin (approximately 1/5 inch). Place one rectangle on a lined with parchment paper baking sheet.

Clean mushrooms and chop. Peel onion and garlic and dice both finely. Heat 1 tablespoon of butter in a pan and saute onion and garlic until translucent. Add mushrooms and saute until all liquid has evaporated. Sprinkle with thyme and parsley and season with salt and pepper. Remove from heat.

Preheat the oven to 220 ° C convection preheat.

Spread slightly cooled mushrooms on pastry, leaving a narrow margin. Top with second pastry sheet and press the edges together firmly all around. Prick pastry with a fork several times. Sprinkle with Parmesan and dot with remaining butter cut into small pieces. Bake in preheated oven at 220°C (approximately 425°F) for about 25 minutes or until golden brown.

Remove from oven and serve hot or cooled.
