- 5 Apricot
- 700 grams carrots
- 2 small onions
- ½ bunch cilantro
- 2 Tbsps olive oil
- ½ Tbsp Harissa
- 1 Tbsp honey
- 100 milliliters Vegetable broth

Preparation steps

Cut the lemon into quarters and cut into narrow columns. Scald the apricots, rinse off, peel, quarter, pit and cut into wedges. Peel the garlic and chop finely. Peel the carrots and cut into slices. Pull the onions apart. Rinse the cilantro, shake dry, pluck the leaves and chop.

In a tagine, heat the oil and sauté the onions with carrots and garlic. Add the harissa, the honey and the lemon. Mix in the broth and cook over medium heat covered with the lid for about 15 minutes. Add the apricots and cilantro and simmer for another 10-15 minutes. Season to taste and serve.
