Preparation steps

1.

Cut beef into chunks. Soak dried fruit in warm water for 30 minutes then drain through a sieve. Peel, halve and cut the onion into strips. Peel carrots, cut in half lengthwise and cut into quarters. Heat the oil in a Dutch oven and brown the meat briefly. Season with salt and pepper.

Stir in the onions, carrots and dried fruit. Saute briefly. Add broth, bring to a boil. Cover, reduce the heat and simmer for 45 minutes. Rinse the cilantro, pluck the leaves and chop. Stir into the meat and let sit for 5 minutes. Prepare the couscous according to package instructions. Spoon meat stew over couscous and serve.
