Ingredients

150 gramsMonkfish ready to cook
2Garlic clove
2 tablespoonsOlive oil
3 slicesBacon
100 gramsSnow pea
1large Potatoes waxy
½Shallots
Salt
freshly ground Pepper
Chile pepper crushed

Directions

1 Blanch snow peas in boiling salted water for a few minutes. Drain and rinse in cold water, drain well. 
2 Peel shallot and cut into rings.
3 Peel potatoes and cut into approximately 0.5 cm slices (approximately 1/5 inch). Spread potatoes in a casserole dish and season with salt and pepper, drizzle with 2 tablespoons of oil. Bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes or until golden brown.
4 Season fish with pepper lightly and wrap in bacon slices, place into a baking pan. Drizzle with 2 tablespoons of olive oil and add peeled garlic cloves to the pan. 
5 Turn down oven temparature to 120°C (approximately 250°F) and spread snow peas and shallot rings on potatoes.  
6 Place pan with the fish into the oven and cook together for 15-20 minutes. 
7 Before serving, cut fish into slices, season with a little salt and chili pepper. Arrange with vegetables on plates and serve.
