300 grams Monkfish (ready to cook)
4 garlic cloves
4 Tbsps olive oil
6 slices Bacon
200 grams Snow peas
2 large potatoes (waxy)
1 shallot
salt
freshly ground peppers
chili peppers (crushed)

Preparation steps

1.

Blanch snow peas in boiling salted water for a few minutes. Drain and rinse in cold water, drain well. 

2.

Peel shallot and cut into rings.

3.

Peel potatoes and cut into approximately 0.5 cm slices (approximately 1/5 inch). Spread potatoes in a casserole dish and season with salt and pepper, drizzle with 2 tablespoons of oil. Bake in preheated oven at 180°C (approximately 350°F) for about 20 minutes or until golden brown.

4.

Season fish with pepper lightly and wrap in bacon slices, place into a baking pan. Drizzle with 2 tablespoons of olive oil and add peeled garlic cloves to the pan. 

5.

Turn down oven temparature to 120°C (approximately 250°F) and spread snow peas and shallot rings on potatoes.  

6.

Place pan with the fish into the oven and cook together for 15-20 minutes. 

7.

Before serving, cut fish into slices, season with a little salt and chili pepper. Arrange with vegetables on plates and serve.
