600 grams Monkfish (ready to cook)
8 slices Bacon
½ bunch thyme
12 Artichoke
200 grams Cherry tomatoes
2 garlic cloves
4 shallots
4 Tbsps olive oil
200 milliliters white wine
Sea salt

Preparation steps

1.

Rinse the thyme, shake dry, and pluck the leaves from half of the thyme.

Rinse the monkfish, pat dry, sprinkle with thyme leaves, and season with pepper. Wrap the bacon around the monkfish and tie with kitchen twine.

Cut the artichokes into quarters.

Peel the garlic, shallots and tomatoes, and cut in half.

Spread the prepared vegetables in a baking dish, add thyme and pour in the white wine. Season with salt and pepper, and place the monkfish on top. Drizzle with olive oil and bake in a preheated oven at 180°C (fan: 160°C, gas mark 2-3) (approximately 350°F) for about 30-40 minutes. If necessary, pour in some water.

Remove the kitchen twine from the monkfish and serve.
