- 18 ozs Zucchini (sliced)

- 1 onion (chopped)
- 26 ozs Tomatoes (quartered)
- 1 ¼ cups Ricotta cheese
- 2 tsps olive oil
- 1 cup grated Cheddar cheese
- Sage
Preparation steps

Heat the oven to 180°C (160° fan) 350°F gas 4. Butter a baking dish.

Heat the oil in a frying pan and quickly brown the courgettes. Remove and season with salt and pepper.

Add the onions to the pan and cook until softened.

Layer the tomatoes, courgettes and onions in the baking dish, crumbling in the Ricotta. Season to taste. Trickle with olive oil and scatter the cheese over the top. Add the sage leaves and bake for 20-25 minutes, until bubbling.
