For the pastry
1 ¾ cups all-purpose flour
½ tsp salt
1 cup butter
1 cup Quark
For the filling
3 Tbsps Oil
2 Red onions (sliced)
1 clove garlic cloves (finely chopped)
2 red Bell pepper (diced)
1 small Zucchini (sliced)
3 ½ ozs cherry Tomatoes
3 ½ ozs button Mushrooms (halved)
1 Tbsp Fresh herbs (e. g. oregano, basil, thyme)

Preparation steps

1.
For the pastry: Put the flour in a mixing bowl and rub in the butter until the mixture resembles breadcrumbs. Stir in the salt and quark and mix to a smooth dough. Wrap in cling film and chill for 30 minutes.

Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a rectangular tart tin.

For the filling: heat 2 tablespoons oil in a frying pan and gently cook the onion, garlic, courgette and bell pepper for 3 minutes.

Mix the contents of the pan with the tomatoes, mushrooms and herbs and season to taste with salt and pepper.
5.
Roll out the dough slightly larger than the tin and line the tin with the dough, overlapping the edges.
6.
Spoon the vegetables on the pastry base. Drizzle with the remaining oil and bake for about 30 minutes until the vegetables are tender. Serve hot or warm.
