- 2 cups Red pepper flakes
- 2 cups purple potatoes
- 1 Leek
- 1 ⅓ cups button Mushrooms
- 1 tart Apple
- 2 Tbsps lemon juice
- ½ cup chickpeas (tinned)
- 2 Tbsps raisins
- 2 sprigs thyme
- 5 Tbsps Sherry vinegar
- salt
- freshly ground Black pepper
- Tabasco sauce
- 4 Tbsps olive oil
- 4 Tbsps Sour cream
- 4 leaves red Cabbage

Preparation steps

Wash the potatoes and cook in their skins in salted water for about 25 minutes. Drain thoroughly and leave to cool.

Wash and trim the leek and cut into small pieces. Soak the raisins in lukewarm water. Clean and chop the mushrooms. Wash, halve, core and chop the apple and sprinkle with lemon juice. Cut the potatoes into bite-sized pieces. Drain the chick-peas.

Wash and chop the thyme. Mix the vinegar, salt, pepper and 2-3 drops Tabasco with the olive oil and sour cream to make a dressing. Mix all the salad ingredients and add the dressing. Leave to stand in the refrigerator for a while. Serve in red cabbage leaves on plates, if you wish.
