- 4 ripe red Tomatoes
- 2 ripe yellow Tomatoes
- 150 grams green Beans
- 70 grams Arugula
- ½ bunch parsley
- 100 grams black Olives
- 1 red onion
- For the dressing
- 3 Tbsps olive oil
- 4 Tbsps white balsamic vinegar
- 2 Tbsps Vegetable broth
- salt

Preparation steps

Rinse the tomatoes in boiling water and peel. Cut the tomatoes into sixths, then cut those pieces into half. Rinse the green beans, halve if necessary, and blanch for 8 minutes in boiling salted water. Remove the beans, rinse under cold water, and drain thoroughly. Rinse the arugula and pat dry. Rinse the parsley, pat dry, and remove the leaves. Drain the olives. Peel the onion, cut in half, and julienne.

Mix all salad ingredients together, season with salt and pepper, and spread over 4 plates. Mix all the ingredients for the salad dressing together, then drizzle over the salad. Slice the halloumi, then broil until golden brown in the oven, on the grill, or in a grill pan. Serve the halloumi with the salad.
