- ¼ cup olive oil
- 4 green peppers (seeded and cut into strips)
- 4 red peppers (seeded and cut into strips)
- 4 yellow Bell pepper (seeded and cut into strips)
- 6 large eggs
- 1 cup Comté cheese (finely grated)
- salt
- peppers
- thyme (to garnish)

Preparation steps
1.
Pre-heat the oven to 180°C | 350F | gas 4.
2.
Heat a tablespoon of olive oil in a large frying pan set over a moderate heat until hot. Flash fry the peppers in batches for 1 minute, using a little fresh olive oil for each batch.
3.
Move the lightly sautéd peppers to a plate between batches.
4.
Place all the peppers in a 10 inch x 4 inch rectangular ceramic baking dish and mix well.
5.
Whisk together the eggs, cheese and seasoning until combined. Pour over the peppers and move the dish to the oven.
6.
Bake for 10-14 minutes until the egg is set. Remove from the oven and let the tian stand for 5 minutes before garnishing with thyme and serving.
