- 1 stale Bread roll
- 5 cups minced mixed Meat
- 3 onions (diced)
- ⅓ cup Bacon (diced)
- 2 eggs
- 1 tsp Mustard
- breadcrumbs (as required)
- 2 cups cherry Tomatoes
- 1 Tbsp fresh Basil (cropped)

Heat the oven to 200°C (180° in a fan oven), 400F, gas 6. Soften the bread roll in cold water and

a loaf tin with aluminium foil.

Ring out the roll well and mix with the meat, onions, bacon, eggs, mustard and the breadcrumbs. Season with salt and ground black pepper. Transfer the mixture to the prepared loaf tin and bake for around 60 min.

After 50 min in the oven place the tomatoes on top of the meatloaf and season with salt and ground black pepper. Remove the meatloaf from the oven, carefully take it out of the loaf tin and serve on a plate. Serve garnished with the basil.
