- ½ lemon (juice)
- ½ cup unsalted butter
- ⅓ cup caster sugar
- 2 eggs (beaten)
- 1 pinch salt
- 2 cups self-rising flour
- ½ cup dried Apricot (finely chopped)
- ½ cup raisins

1 Cutting board, 1 Small knife, 1 Tablespoon, 1 Non-stick pan, 1 Small bowl, 1 Measuring cups, 1 Teaspoon, 1 Whisk
Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Grease and line a 1 kg|2 lb loaf tin with non-stick baking paper.

Mash the bananas and the lemon juice to a paste with a potato masher.
3.
Beat the butter and sugar in a mixing bowl until soft and light. Whisk in the eggs and salt, until combined.
4.
Fold in the flour alternately with the banana paste. Stir in the apricots and raisins.
5.
Spoon the mixture into the tin and bake for 50-55 minutes until cooked through. Test by inserting a skewer into the centre of the cake- it should come out clean. Cool in the tin for 10 minutes, then place on a wire rack to cool completely.
