- For the cake
- ½ cup butter
- ½ cup coconut sugar
- 3 eggs
- 1 ⅓ cups self-rising flour
- 2 tsps Baking powder
- 2 Tbsps milk
- 1 ⅓ cups fresh Fruit (chopped, peaches, cherries, apples)
- For the topping
- sliced Kiwi (peeled)
- sliced Strawberries
- Cherries (pitted & halved)
- sliced Peaches
- seedless Grape
- ⅔ cup sugar-free apricot Jam (warmed)
- To decorate
- Strawberry Leaf lettuce variety

Preparation steps
1.
For the cake: heat the oven to 350°F. Grease an 8" square tin.

Beat together the butter and sugar in a mixing bowl. Add the eggs one at a time, beating well after each addition.
3.
Sift in the flour and baking powder and mix into the creamed mixture with the milk and vanilla until blended.
4.
Gently stir in the chopped fruit.
5.
Spoon evenly into the tin and bake for 40-50 minutes until golden. Cool in the pan for 10 minutes, then place on a wire rack to cool completely.
6.
For the topping: arrange the fruit on the cake. Carefully spoon over the warmed jam and leave to set.
Decorate with strawberry leaves.
