- 2 dried noodle nests
- 1 Tbsp Nut oil
- 1 tsp sesame oil
- 2 Chicken thigh (skinned, deboned and chopped)
- 1 carrot (peeled and cut into thin batons)
- 2 cloves garlic cloves (finely sliced)
- 1 tsp fresh ginger (grated)
- 3 Tbsps soy sauce
- 2 Tbsps Oyster sauce
- ⅜ cup chicken stock
- 2 cups spring greens (shredded)

Preparation steps
1.
Cook the noodles in boiling salted water according to packet instructions.
2.
Heat the oils in a wok and saute the chicken over high heat until patchily golden.
3.
Add the carrots, mushrooms, garlic and ginger and stir fry for 2-3 minutes until the mushrooms are tender.
4.
Add the noodles to the pan with a little cooking water and toss to combine, then add the sauces and spring greens. Heat through until bubbling and the greens are wilted, then serve.
