Special Chow Mein
Heat the groundnut oil in a large wok over a high heat until hot, then add the pork and stir-fry for 2-3 minutes.
Add the carrot, beansprouts, spring onions and mushrooms to the wok and continue to stir-fry for 2-3 minutes.
Add the cooked noodles, toss well using tongs, then season with the soy sauce. Make sure the noodles are hot before spooning into serving bowls. Serve immediately.
