- For the roast beef canapés
- 4 slices Roast beef
- 1 Tbsp Alfalfa sprouts
- 1 Tbsp cream cheese
- 1 Tbsp Mayonnaise
- 1 tsp scallions
- 1 small Pickled cucumber
- salt
- freshly ground peppers
- For the cheese and apple canapés
- 2 Apple
- 2 Tête de Moine cheese
- honey
- freshly ground peppers
- Leeks
- For the beet canapés
- 1 Tbsp Radish sprout
- 2 slices Beets (jarred)
- 2 slices Goat cheese
- 2 Walnut

Preparation steps
1.
For the roast beef canapés: Shape the roast beef slices into rosettes and place on canapé spoons. Beat the cream cheese and mayonnaise until smooth, mix in the chives, 1/2 the diced pickle and season with salt and pepper. Spoon over the roast beef and garnish with the remaining diced pickle.
2.
For the cheese and apple canapés: Place the apples on canapé forks and drizzle with a little honey. Arrange the cheese rosettes on top and season with pepper. Serve garnished with chives.
3.
For the beet canapés: Place the sprouts on canapé spoons. Top with beets, cheese and walnuts.
