Mint Cheesecake
Ingredients
- For the cheesecake
- 275 grams Pastry flour
- 1 pinch salt
- 6 Tbsps vegetable oil
- 4 eggs
- 170 grams sugar
- 400 grams sheep cheese (or soft feta cheese)
- 1 bunch mint
- butter (for the pan)
- powdered sugar (for dusting)
Preparation steps
Mix flour with salt and oil. Add 2-3 tablespoons cold water and knead into a smooth dough. Wrap dough in plastic wrap and chill for 30 minutes. Beat eggs with sugar until frothy. Add sheep cheese (if using soft feta, crush with a fork first). Preheat oven to 200°C (approximately 400°F). Rinse mint, shake dry, pluck leaves and finely chop. Stir into cheese mixture.
Line the bottom of a springform pan with parchment paper and grease sides with butter. Roll dough out until slightly larger than the springform pan. Press dough into pan, pushing up sides to create an edge. Spread cheese mixture onto dough and smooth. Bake on middle rack for 40 minutes. If cake begins to darken, cover with aluminum foil. Loosen baked cake from pan with a knife, remove cake rim and cool cake on a wire rack. Dust with powdered sugar while still lukewarm. Slice and serve.
