This fig cheesecake is high in sugar and calories but contains protein, calcium and valuable minerals from the figs.

5 eggs (separated)
1.111 cups fresh Goat cheese
2 ¼ cups Sour cream
cup Orange liqueur (e. g. Cointreau)
0.333 cup Corn starch
1 Vanilla bean (halved lengthways, seeds scraped out)
0.333 cup sugar
2 Tbsps Vanilla sugar
1 lemon (zest and juice)
18 ozs Figs (halved lengthways)
cup cream
1 Tbsp honey
2 Tbsps Orange liqueur (e. g. Cointreau)
2 Tbsps sliced almonds (toasted)
powdered sugar (for dusting)

Preparation steps

Heat the oven to 325°F, and line a spring-form tin with grease-proof paper.

Whisk the egg whites until stiff. Beat the egg yolks with the goat's cheese, sour cream, liqueur, cornstarch, vanilla seeds, sugar, and until smooth. Stir in the lemon juice and zest and finally fold in the egg whites.

Spread half of the mixture into the base of the cake tin, smooth over and arrange half of the figs over the surface. Top with the other half of the cake mixture and smooth flat. Bake in the oven for around 1 hour (toothpick test). If the cake starts browning too much, cover with aluminum foil.

Once cooked, switch off the oven and leave the cake in the oven to rest for a further 10 minutes, before removing and leaving to cool completely.

Whip the cream until stiff. Whisk together the honey and liqueur.

Remove the cake from the tin and spread with the cream. Decorate with the remaining fig halves and drizzle over the liqueur sauce. Sprinkle with almonds and serve dusted with icing sugar.
