These s'mores are higher in calories, fat, and sugar, but it's important to have treats every once in a while! If you use dark chocolate, there are numerous health benefits that come with it in addition to the energy the carbs will bring! The lemon zest also provides vitamin C and other nutrients!
For an easier preparation, you can use store bought shortbread.

- ½ cup unsalted butter
- ¼ cup sugar
- 1 lemon (grated zest)
- 1 ½ cups all-purpose flour
- 1 pinch salt
- 6 Tbsps Chocolate spread
- 12 white Marshmallow

Watch the marshmallows under the grill carefully, as they burn easily.
Preparation steps
1.
Beat the butter, sugar and lemon zest in a mixing bowl until soft and creamy.

Sift in the flour and salt and mix to a dough. Shape the dough into a log about 5cm / 2" wide and wrap in cling wrap. Chill for 1 hour.

Heat the oven to 160°C / 325°F. Line a baking tray with non-stick baking paper.
4.
Cut the log with a sharp knife into 12 rounds and place on the baking tray. Bake for 18-20 minutes, until golden brown around the edges. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.
5.
Heat the grill. Line the grill tray with non-stick baking paper.
6.
Toast the marshmallows under the grill until lightly golden and starting to melt.
7.
Spoon a little chocolate spread on each shortbread round and place a marshmallow on top.
