350 grams Filo dough
50 grams butter (melted)
200 grams shrimp (ready to cook)
2 sprigs Dill
12 eggs
4 Tbsps Whipped cream
salt

Preparation steps

Preheat oven to 200°C (approximately 400°F).

Cut filo dough sheets into squares about 10 x 10 cm (approximately 4x4 inches) and brush with butter. Brush wells of a muffin tin with butter and line with layers of buttered filo sheets, offsetting each layer. Set aside 12 shrimp for garnish and divide the rest among the pastry wells. Pluck the dill, set aside some for garnish and finely chop the rest. Beat eggs, add the cream and herbs and season with salt and pepper. Pour egg mixture over shrimp in pastry shells and bake until golden brown and thickened, about 15 minutes. Turn off the oven, garnish quiches with shrimp and return pan to oven to to warm the garnish.

To serve, remove quiches from the muffin tin and garnish with dill.
