Preparation steps

With an electric mixer, mix together the flour, nuts, eggs, sugar, vanilla sugar and milk until smooth. Peel and quarter four of the five pears and remove the cores. Thinly slice and sprinkle with the lemon juice, then mix into the dough. Rinse the remaining pear, wipe dry and cut into thin slices.

Bake this pear in the oven on parchment paper at 180°C (approximately 350°F) for about 10 to 15 minutes.

Meanwhile, heat some oil in a pan and bake the pancakes one at a time. For each pancake, add about as much batter to the pan as will fit in a sauce spoon or a small ladle.

Bake the pancakes over medium heat until brown on both sides. As you finish each pancake, stack them on top of each other on a plate, cover with foil and keep warm in the oven. Once all pancakes are finished, pour maple syrup over the top of the stack.

5.

Garnish the pancake tower with baked pear slices and serve immediately.
