5 Tbsps old fashioned Oats
4 Tbsps Spelt flour
2 Tbsps Maple syrup
1 pinch salt
3 ozs milk
1 Pear
3 Tbsps Apple juice
1 Star anise
1 Cinnamon stick
2 Tbsps butter
1 pinch cinnamon

Preparation steps

1.

Separate eggs. Mix egg yolks with oats, spelt flour, 1 tbsp. maple syrup, salt and milk and leave to swell for 10 minutes.

In the meantime, clean, wash, halve, core and slice the pear. Put pear slices with apple juice, remaining maple syrup, star anise and cinnamon in a small pot, bring to the boil once and put aside.

Beat the egg whites until stiff and fold them into the egg yolk and oat mixture. Heat 1 tbsp. butter in a pan and add the dough. Fry over low to medium heat for about 5 minutes, turn the dough and fry for another 5 minutes.

4.

Cut the dough into pieces with two spatulas. Add remaining butter, sprinkle with a little cinnamon and fry for another 2-3 minutes while turning. Serve Pancake with the pear slices.
