- 4 Tbsps olive oil
- 2 Tbsps white wine vinegar
- 1 tsp Mustard
- 9 ozs canned Sweet corn (drained and rinsed)
- 9 ozs cherry Tomatoes (halved)
- 4 scallions (chopped)
- 2 Tbsps chopped Basil
- 3 Tbsps vegetable oil
- 4 Chicken breasts

Preparation steps
1.
Mix together the olive oil, vinegar and mustard and season with salt and pepper to make a dressing.
2.
Place the sweetcorn, tomatoes, spring onions and basil in a large bowl and stir in the dressing.
3.
Heat the vegetable oil in a large frying pan. Season the chicken breasts with salt and fry for about 3 minutes on each side or until cooked through. Serve topped with the salsa.
