- 3 sweet Corn
- 7 ozs cherry Tomatoes (diced)
- 1 small onion (finely chopped)
- 3 Tbsps olive oil
- 1 Tbsp lemon juice
- 1 Tbsp white wine vinegar
- ½ tsp salt
- ¼ tsp freshly ground Black pepper
- 2 Tbsps chopped cilantro
- 2 ripe Avocados

Preparation steps
1.
Strip the corn kernels from the cobs and put into a large bowl. Stir in the tomatoes and onion.
2.
Whisk together the oil, lemon juice, vinegar, salt and pepper until combined and pour over the corn mixture. Toss to coat vegetables thoroughly.
3.
Add the coriander and toss to combine.
4.
Peel the avocados and dice the flesh. Gently stir into the vegetables until combined. Serve at room temperature.
