- For the meringue
- 4 egg whites
- 160 grams sugar
- 2 Tbsps Vanilla sugar
- 1 pinch salt
- For the filling
- Raspberry cream (for filling)
Preparation steps
1.
Preheat oven to 100°C (approximately 210°F).

Beat egg whites with salt until foamy.
3.
Gradually add sugar and vanilla sugar and continue to beat until the mixture is glossy and cut resistant.

Pour mixture into a piping bag with a small hole tip.
5.
Pipe little snails on baking sheet lined with parchment paper.
6.
Line border with polka dots.
7.
Pipe about 16 meringues onto the baking sheet.

Bake in preheated oven for 4 hours to dry, leaving oven door slightly open. The bottoms should not be dark, so possibly reduce temperature to 80°C (approximately 175°F) and leave a little longer to dry.
9.
Remove from oven, let cool and keep in a tightly closed container. Fill the meringue to taste with cream (such as raspberry whipped cream) and serve.
